Assembly & use
The griddle requires no assembly – you simply place it on the grill grate of your Boretti Ceramica Large kamado next to your existing grate or cast iron grate. Before using the griddle for the first time, it's important to season it properly. Wash it first with warm water and washing-up liquid to remove any manufacturing residue, dry it thoroughly and rub the entire surface with a heat-resistant oil such as sunflower or linseed oil. Then heat the griddle on your kamado to approximately 200 degrees Celsius and let it burn for an hour. Allow to cool, rub over again and heat once more. This process creates the first layer of your non-stick coating.
During use, you can use the griddle at any temperature suitable for your kamado, from slow cooking at 150 degrees to quick searing at 250 degrees or higher. For the best results, always allow the griddle to preheat properly – at least 10 minutes at the desired temperature. After use, it's best to clean the griddle whilst it's still warm. Use hot water and a stiff brush or scouring sponge, but avoid harsh cleaning products that could damage the non-stick coating. Always dry the griddle thoroughly and apply a thin layer of oil to prevent rust formation.
For storage outside the barbecue season, we recommend keeping the griddle in a dry place indoors. Rub it with a slightly thicker layer of oil for long-term protection against moisture. Can I also use the griddle on a regular barbecue?
Absolutely! Although the griddle is designed for the kamado, you can also use it on a traditional gas or charcoal barbecue, provided the cooking surface is large enough. The cast iron is suitable for all heat sources. On a gas barbecue you simply place it on the cast iron grates, on a charcoal barbecue it works excellently too. What should I do if rust does form?
Light rust on cast iron is not a disaster and is easy to fix. Scrub away the rust with steel wool or a scouring sponge, rinse the griddle and dry it thoroughly. Then apply a layer of oil and heat the griddle on your barbecue to restore the protective layer. With heavier rust, you can completely strip the griddle and season it again according to the process described earlier. The cast iron itself remains perfectly good.
Is the griddle suitable for induction or a hob?
