The two cast iron grill grates, each 48.2 x 38 cm, are the beating heart of the Robusto. Uses
Direct grilling for perfect crust and grill marks
With direct grilling, you place the food directly above the burning burners on the cast iron grates. This method is perfect for steaks, burgers, sausages, fish fillets and vegetables that need to cook quickly and require a crispy crust. The high temperature of the cast iron grates creates those characteristic grill marks and the Maillard reaction that adds so much flavour. With the Robusto's generous cooking surface, you easily prepare food for 16 people at once.
Indirect grilling for larger pieces of meat
For larger pieces such as a whole chicken, ribs or pulled pork, use the indirect grilling method. Turn off the middle burners and place the meat in the centre, whilst the outer burners provide circulating heat. Close the lid and the Robusto functions as an outdoor oven. The thermometer helps you maintain a temperature between 120 and 180 degrees, perfect for low-and-slow preparations that make meat tender and juicy.
High-temperature wok cooking
The wok burner takes your barbecue experience to the next level. Heat your wok until it smokes and stir-fry vegetables, meat or noodles the way it's meant to be done: fast, hot and with that distinctive wok flavour. Assembly & use
The Boretti Robusto is delivered in sturdy packaging and requires some assembly. Allow approximately one hour to assemble the base, storage cabinet, burners and grates. The instruction manual is clear and with a bit of technical knowledge you can do this yourself. Make sure you work on a level surface and have a socket set handy. Some parts are heavy, so an extra pair of hands can be useful when assembling the base.
Before grilling for the first time, it's important to season the cast iron grates. Coat them with heat-resistant oil and let them warm at high temperature for an hour. This process creates a natural non-stick layer and protects the cast iron from rust. Repeat this process a few times during the first weeks of use. After each grilling session, brush the grates clean whilst they're still warm with a grill brush. For stubborn food residue, heat the barbecue well, then everything burns off naturally. Clean the grease collection pan regularly to prevent grease buildup and potential flare-ups.
Outside the grilling season, we recommend covering the Robusto with a suitable protective cover or storing it in a shed or garage. Check before storage that all parts are clean and dry. Frequently asked questions
Are the cast iron grates replaceable?
Yes, the cast iron grates are replaceable should this be necessary after years of intensive use. At Boender Outdoor we can advise you on the correct spare parts for your Boretti Robusto. However, cast iron grates last extremely long with proper care, often longer than the barbecue itself. Make sure you oil them lightly after use to prevent rust formation.
Which gas bottle do I need for the Robusto?
The Robusto runs on propane or butane and you connect it to a standard 10 or 11 kg gas bottle. Make sure you use an approved pressure regulator and hose that comply with Dutch safety standards. A full gas bottle will last several barbecue sessions with normal use. Always check before use that all connections are tight and test for leaks with soapy water.
Can I also use the Robusto for pizzas?
With the lid closed and the burners at the right temperature, you can certainly bake pizzas on the Robusto. For optimal results we recommend a pizza stone, which distributes heat evenly and makes the base crispy. Preheat the stone well (20-30 minutes) and you'll achieve pizzeria quality in your own garden. The thermometer helps you reach the ideal temperature of approximately 250-300 degrees.
How much space do I need around the barbecue?
Keep at least 50 cm of free space on all sides for safe operation and ventilation. A metre of free space at the front where you work is more comfortable. Never place the barbecue under a canopy or overhang due to fire risk and ensure there are no flammable materials nearby. The Robusto, with its dimensions of 161 x 61 cm, is substantial, so measure your patio or spot carefully before purchasing.
