The ceramic egg design is no accident – this shape is optimised for heat circulation and fuel efficiency. Direct Grilling at High Temperature

For classic barbecuing, you open the air vent fully and let the kamado reach 250-350°C. The direct heat ensures quick cooking times and that wonderful caramelisation that barbecue fans so appreciate.

Indirect Grilling and Smoking

The heat now circulates around your dish, just like in a conventional oven but with the added flavour of charcoal and smoking wood. This method is ideal for chicken, spare ribs, pork shoulder and other cuts of meat that benefit from slow cooking at lower temperatures between 100-160°C. Add some smoking wood chunks to the charcoal for extra flavour dimension, and prepare dishes that can simmer for hours without needing to constantly top up the fuel.

Assembly & Use

The Boretti Ceramica Medium is delivered largely assembled. The base needs to be assembled with the supplied bolts and nuts, after which the ceramic egg is placed in position – a job for two people given the 70 kilogram weight. The manual guides you step by step through the process, and within an hour your kamado is ready to use. Before first use, check that all parts are firmly secured and that the thermometer is correctly positioned.

Before your first real cooking adventure, it is advisable to season the cast iron racks. Lightly coat them with vegetable oil and let them warm up on the barbecue for 30-45 minutes at approximately 150°C. This process builds up the protective layer that prevents food from sticking. The ceramic itself also needs a first use: start at lower temperatures (maximum 150°C) for 2-3 hours to allow any moisture in the ceramic to evaporate. On subsequent sessions gradually increase the temperature until you use the full range.

Maintenance of the Ceramica Medium is surprisingly simple. After grilling, you let the temperature rise to 250°C to burn off food residue – the kamado version of pyrolysis. Then wipe the cast iron racks clean with a dry grill brush; never use washing-up liquid as it damages the built-up patina. Empty the ash collection tray regularly and remove ash from the bottom of the kamado itself. The ceramic only needs to be wiped down with a damp cloth on the outside occasionally. Outside the grilling season we recommend a protective cover, although the ceramic is resistant to weather conditions. How much charcoal do I need per session?

Thanks to the excellent insulation of ceramic, the Ceramica Medium is very economical with fuel. For a short grilling session of 1-2 hours, about 1 kilogram of charcoal is sufficient. For prolonged smoking of 8-12 hours you only need 2-3 kilograms, considerably less than with conventional barbecues. Preferably use large chunks (lump) charcoal rather than briquettes for the best results and longest burning time.

Can I regulate the temperature precisely?

Absolutely, that is actually one of the major advantages of a kamado. By adjusting the lower air vents and the top dampers, you determine how much oxygen the fire receives. More air means higher temperatures, less air lowers the heat. The ceramic mass responds slowly, which means temperatures remain stable and do not fluctuate wildly. With some practice you adjust the desired temperature to an accuracy of 10-15°C.
