The kamado BBQ stands out from all other barbecues thanks to its unique construction. The heavy cordierite ceramic acts as a thermal flywheel: it heats up slowly but retains heat for hours without any adjustments needed. This has real benefits for you as a cook:

What cooking techniques are possible on a kamado?
Direct grilling (150–350 °C)
The hot charcoal sits directly under the grate. Ideal for steaks, chicken fillets, pork chops, fish and vegetables. At high temperatures (250+ °C) you'll get beautiful grill marks and a caramelised crust. The intense heat seals the pores of the meat so all the juices stay inside.
Indirect smoking — low and slow (100–130 °C)
Place a plate setter under the grate for indirect heat. Add smoking wood chips or chunks for extra aroma. Ideal for pulled pork (10–14 hours), brisket (8–14 hours), spare ribs (3–2–1 method) and whole fish. The way to achieve restaurant-quality BBQ at home.
Pizza baking (300–350 °C)
Heat the kamado to 300–350 °C with a ceramic pizza stone. After 30–40 minutes of preheating, you can bake a Neapolitan pizza in just 60 to 90 seconds — with a crispy base and perfectly melted cheese. The even radiant heat from the ceramic gives the same result as a wood-fired oven.
Roasting and rotisserie (160–200 °C)
With a rotisserie you can slowly turn whole chickens, lamb legs or pork joints. The constant rotation distributes heat evenly and gives you a juicy inside and crispy outside — hands-free cooking at its finest.
Baking as an oven (180–220 °C)
At a stable temperature of 180–220 °C the kamado works like a convection oven. Bake sourdough in it, make pecan pie, quiche, or prepare stews in a cast-iron Dutch oven.

Comparing kamado sizes
Compact — 15 inch (grate ±33 cm)
Ideal for 1 to 3 people or smaller terraces and balconies. Compact in size, fully functional in every way. Perfect as a travel barbecue or for a flat with limited outdoor space. Check out the Keij Legend Compact and Keij Pro Compact.
Large — 21 inch (grate ±47 cm)
The most popular size. Suitable for 4 to 6 people. A full rack of spare ribs, a chicken on the spit, or multiple pizzas can cook at once on the 21-inch. XL — 23 inch (grate ±52 cm)

Kamado maintenance and cleaning
A kamado requires very little maintenance. The ceramic largely cleans itself through the high temperatures when in use. Here are some practical tips:
- After use — close all air vents to extinguish the charcoal. Remove ash residue via the ash drawer after cooling
- Cleaning the grate — briefly grill the grate at high temperature to burn off residue, then scrub with a grill brush
- High heat burn-off — heat the kamado to 350+ °C for a quarter hour every 5 to 10 sessions to burn off fat and residue
- Protection — cover the kamado with a protective cover if it will sit unused outdoors for a long time
- First use — season the kamado on first use: gradually heat it to 150 °C and leave it at that temperature for an hour

Which kamado size should I choose?
For 1–3 people or a small terrace: choose the 15-inch Compact. For 4–6 people with a normal terrace: the 21-inch Large (our best-selling size). Do you regularly cook for more than 6 people or want to cook a whole brisket or multiple chickens at once? Go for the 23-inch XL.
What's the difference between the Keij Legend and the Keij Pro?
Both series use the same cordierite ceramic. The difference is in accessories and warranty: the Legend comes standard with side tables, chip feeder, Divide & Conquer system and cover, and has a lifetime warranty on the ceramic. The Pro has fewer standard accessories but offers the same ceramic quality at a lower price.
